Teriyaki Steak

Crockpot teriyaki steak is today's recipe.

Teriyaki Steak

2 to 2 1/2 lbs. boneless steak, cut up in small pieces
1 tsp ginger
1 Tbs honey
2 Tbs favorite oil
1/2 cup soy sauce
1 garlic clove, crushed

Combine all ingredients and pour over steak. Cook on low 4 to 6 hours in crockpot. Serve over rice.

Whole Lotta Mexican Meal

Here's a crockpot recipe for a Whole Lotta Mexican Meal.

Whole Lotta Mexican Meal

1 pound extra-lean ground beef
2 packages taco seasoning mix -- (1 1/4-ounce)
1/2 cup chopped fresh cilantro or parsley
1/2 cup plain bread crumbs
1/3 cup finely chopped carrots
3 1/2 cups water
1 can sliced ripe olives -- (2 1/4 ounce)drained
1 can diced green chiles -- (7-ounce)
6 garlic cloves -- minced
1 red bell pepper -- diced
2 cups converted white rice
1 can kidney beans -- (15-ounce) rinsed and drained

To make the meatballs, in a medium bowl, combine the ground beef, 1/2 package taco seasoning mix, cilantro, bread crumbs, carrots, and 1/2 cup of the water. Mix to blend well. Roll into 24 balls about 1 1/2 inches in diameter. Set aside.

For the beans and rice, in a 4- or 5-quart electric slow cooker, mix together the remaining 3 cups water with the remaining taco seasoning mix, olives, green chiles, garlic, bell pepper, and rice. Gently push the meatballs down into the rice mixture.

Cover and cook on the low heat setting 4 hours, or until the rice is just tender and the meatballs are cooked through.

Gently stir in the beans. Cover and cook 30 minutes longer.

Crockpot Boiled Potatoes

2 lbs (about 12 to 15) small new potatoes, scrubbed and peeled
1 can cream soup (celery, cheese, chicken, or mushroom)
1/4 cup sour cream
2 Tbs water
2 Tbs green onions, chopped
2 med cloves garlic, minced
1 tsp dill weed
1/2 tsp salt

Place washed potatoes in crock-pot. Stir together remaining ingredients and pour over potatoes. Cover and cook on Low 5 to 6 hours.

Malaysian Sweet Potatoes

This crockpot recipe has a fruity but nicely Asian sauce that is poured over sweet potatoes when they get done. Not your everyday stuff.

Malaysian Sweet Potatoes

3 lbs sweet potatoes, peeled and cut into 1 inch cubes
1 1/2 inches fresh ginger, peeled and minced
1 large onion, diced
1 stalk lemongrass, outer leaves removed, and split lengthwise
1 Tbs sesame oil
1 1/2 tsp tamarind paste
1/4 cup rice wine vinegar
1/4 cup light soy sauce
2 cups orange juice
1 finely grated lemon, zest
1 pinch ground red pepper (to taste)

Place ingredients into crockpot. Cover and cook on high for 4 1/2-5 hours or until potatoes are nice and tender. Remove lemongrass pieces and discard. Season with salt and pepper, if desired. Remove potatoes and keep warm; pour liquid from crockpot into a saute pan and reduce until it gets thick and syrupy, then pour over potatoes; serve.

Hawaiian Pork

Pork from Hawaii straight to your crockpot.

Hawaiian Pork

3 lb boneless pork loin or sirloin roast, rolled and tied
6 whole cloves
1/2 tsp nutmeg
1/4 tsp paprika
1/4 cup catsup
2 Tbs orange juice
2 Tbs honey
1 Tbs soy sauce
2 tsp lemon juice
1/2 tsp Kitchen Bouquet

Place roast on rack and broil 15 to 30 minutes, or until brown.

Stud meat with cloves. Place roast in Slow Cooker on a meat rack. Sprinkle with nutmeg and paprika.

Stir together catsup, orange juice, honey, soy sauce, lemon juice and Kitchen Bouquet. Pour over roast. Cover and cook on Low 10 to 12 hours. (High 4 to 6 hours) Remove meat from slow cooker. Thicken juices with 1-1/2 Tbsps. cornstarch and 2 Tbsps. water. Cook on High until thickened.

Creole Beef with Curly Noodles

Here is a delicious crockpot recipe for Creole beef with noodles.

Creole Beef with Curly Noodles

3/4 pound boneless beef round steak
1 green or red bell pepper chopped
1 medium onion chopped
1 clove garlic crushed
1 medium tomato chopped
1 beef bouillon cube
1/2 cup boiling water
1 tablespoon chopped parsley
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons cornstarch
2 tablespoons cold water
6 ounces curly noodles

Slice steak into diagonal strips bout 1/4 inch thick.Combine steak, pepper, onion, garlic and tomato in a 31/2 quart slow cooker. Dissolve bouillon cube in boilingwater. Add to slow cooker with parsley, thyme, salt and pepper. Cover and cook on low about 7 hours or until steak is tender. Turn control to HIGH. In a small bowl, dissolve cornstarch in cold water. Stir into slow cooker. Cover and cook on HIGH about 10 minutes or until slightly thickened. Meanwhile, cook noodles according to package directions and drain. Spoon steak mixture over the noodles. Makes 5 or 6 servings.

1 round steak, cut up
1 onion, diced
1 stalk celery, diced
1 lg. can bean sprouts
1 lg. mushrooms
1 lg. can chop suey veggies

Juice:

3 Tbs. cornstarch
1/2 c. water
3 Tbs. soy sauce

Brown meat. Dice round steak. Mix all ingredients cook in crockpot on low all day. Cook on stove in pot 1 hour. Mix until thickens.

Crockpot Olive Stew

Ever had an olive stew? Guess what, a crockpot makes a great olive stew.

Crockpot Olive Stew

3 large onions, chopped
6 cloves garlic, minced
1-3 lb butternut squash, peeled, seeded, cut into 1" cubes
3 red bell peppers, seeded and cut into 1" pieces
1 cup canned vegetable broth
1 bunch kale, stems trimmed, leaves cut 2" strips
1 Tbs dried sage
5 15-oz cans white kidney beans, rinsed and drained
1 cup kalamata olives, pitted and halved
Salt and fresh ground pepper
Freshly grated Romano cheese (optional)

Combine all ingredients except the cheese in the crockpot cook on low of 8 to 10 hours or on high for 5 to 6 hours. Transfer to large shallow serving bowl and sprinkle generously with grated cheese if desired.

Rice and Veggie Soup

Today's recipe is for rice and veggie soup.

Rice and Veggie Soup

2 (14-oz) cans vegetable broth
1 (28-oz) can crushed tomatoes, undrained
1 1/2 cups chopped carrot
3 small zucchini, cut into 1/2 inch slices
1 medium yellow bell pepper, cut into 1/2 inch pieces
1/2 cup sliced green onions
2-3 cloves garlic, minced
2 cups shredded cabbage
2 teaspoons dried marjoram
Salt and pepper
1 cup uncooked instant rice
1/4 cup chopped fresh basil

Add all the ingredients except the rice and basil to a large slow cooker. Cover and cook on LOW for 6-8 hours or until vegetables are tender. Add in rice; stir. Cover and cook on LOW for 15 minutes or until rice is tender. Stir in basil. Serve hot. This is a tasty, low-fat soup. Add some garlic bread and salad.

Tuna Stuffed Bell Peppers

You got your tuna, you got your bell peppers. Put them together and you have tuna stuffed bell peppers from the crockpot.

Tuna Stuffed Bell Peppers

2 cup tomato juice
6 oz tomato paste
14 oz chunk style tuna, drained and rinsed
2 Tbs dried onion flakes
2 Tbs dried vegetable flakes
Garlic powder to taste
4 medium green bell peppers, tops removed, cored and seeded

Mix the tomato juice and the tomato paste. Set 1/3 of the mixture aside. Mix the remaining tomato mixture with all the other ingredients except the peppers. Fill the peppers equally with the mixture. Place in the slow cooker. Pour the reserved tomato mixture over. Cover. Cook on LOW for 8 to 9 hours. Serve hot.

This crockpot bean recipe offers a taste of Cuba. Be warned, it makes a lot!

1 lb dried black bean, sorted and rinsed
1 large onion, chopped
1 large bell pepper, chopped
5 cloves garlic, finely chopped
2 bay leaves
1 14.5-oz can diced tomatoes, undrained
5 cups water
2 Tbs olive oil
4 Tbs ground cumin (optional)
1 finely chopped jalapeno
1 tsp salt
3 cups hot cooked rice, for serving

Soak beans overnight and discard soak water. Combine all ingredients except rice in crockpot and cook on low for 6 to 8 hours or until beans are tender and most of the liquid is absorbed. Remove bay leaves. Serve beans over rice.

Crockpot Spicy Black Beans

If you like your black beans spicy, you'll love this crockpot recipe.

Crockpot Spicy Black Beans

2 cup dried black beans
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1 medium yellow or green sweet pepper, chopped
2 jalapenos, chopped
4 cloves of garlic, minced
1 Tbs ground cumin
1 tsp ground coriander
1 Tbs dried crushed thyme
1/2 tsp salt
1/4 tsp black pepper
2 bay leaves
5 cups veggie broth
4 cup hot cooked rice

Rinse beans, place in large saucepan. Add enough water to cover the beans by 2 inches. Bring to boiling and reduce heat. Simmer for 2 minutes. Remove from heat and let stand, covered, for 1 hour. (Or omit simmering and soak beans in cold water overnight in a covered pan.) Drain beans.

In a 3 1/2, 4 or 5 quart slow cooker, put in everything but the rice.

Cover, cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours. Discard bay leaves. If desired, mash beans slightly with a potato masher. Serve with hot cooked rice. Serves8.

Vegetable Pasta

Here's a quick and easy recipe for vegetable pasta in the crockpot.

Vegetable Pasta

2 Tbs butter
1 zucchini, 1/4" slice
1 yellow squash, 1/4" slice
2 carrots, thinly sliced
1 1/2 cups mushrooms, fresh, sliced
1 package broccoli, frozen, cuts
4 green onions, sliced
2 to 3 cloves garlic, minced
1/2 tsp basil, dried
1/4 tsp salt
1/2 tsp pepper
1 cup Parmesan cheese, grated
12 ounces fettucine
1 cup Mozzarella cheese, shredded
1 cup cream
2 egg yolks

Rub crock wall with butter. Put zucchini, yellow squash, carrots, mushrooms, broccoli, onions, garlic, seasonings and parmesan in your crockpot. Cover; cook on High for 2 hours. Cook fettucine according to package directions; drain. Add cooked fettucine, mozzarella, cream and egg yolks. Stir to blend well.

Allow to heat for 15 to 30 minutes. For serving turn to Low for up to 30 minutes. Serves 6.

Vegetarian Burritos

Today's recipe is for vegetarian burritos.

Vegetarian Burritos

2 Tbs chili powder
2 tsp oregano
1 1/2 tsp cumin
1 large sweet or regular potato, peeled and diced
1 can black beans or pinto beans, rinsed and drained
4 cloves garlic, minced
1 medium onion, halved and thinly sliced
1 jalapeno pepper, seeded and minced
1 green pepper, chopped
1 cup frozen corn, thawed and drained
3 Tbs lime juice
1 Tbs cilantro
3/4 cup shredded cheese, your choice
Flour tortillas

Combine chili powder, oregano, and cumin in small bowl. Set aside.

Layer potato, beans, half of chili powder mix, garlic, onion, jalapeƱo pepper, green pepper, remaining half of chili powder mix, and corn in crockpot. Cover and cook on LOW for 5 hours, or until potato is tender.

Stir in lime juice and cilantro.

Preheat oven to 350 degrees F.

Spoon a little cheese into the center of each tortilla. Top with 1 cup of filling from crockpot. Fold all 4 sides to enclose filling. Place burritos seam side down on baking sheet. Cover with foil and bake 20-30 minutes.

Serve topped with sour cream.

Crockpot Baked Salmon

Today's recipe is for salmon baked in the crockpot.

Crockpot Baked Salmon

2 15-oz cans salmon
4 cups bread crumbs
1 can tomatoes
1 chopped green pepper
1 tsp lemon juice
1 can cream of onion soup
1 can cream of celery soup
4 well beaten eggs
1 tsp garlic powder
1 tsp Greek seasoning
2 chicken bouillon cubes, crushed
1/4 cup milk

Grease crockpot. Combine all ingredients except celery soup and milk. Pour into crockpot. Cover and cook on LOW for about 5 hours.

Combine cream of celery soup with 1/2 cup of milk and heat in saucepan. Use as a sauce for salmon bake.

1 head red cabbage -- bite-size
3 medium onions -- coarse-chopped
8 ounces raisins
1/2 cup brown rice -- uncooked
1 can whole tomatoes (15 oz. or so )
1 large can tomato paste
1 splash of vinegar
1 lots of water

Put cabbage, onions, raisins, and rice in crockpot; add water to cover generously (tough to do since the cabbage floats). Cook on highest setting for a few hours, until the cabbage is faded and the water is bright purple. Add tomatoes and vinegar. Finish cooking on lowest cooking setting.

Stuffed Pepper Soup

Here's a recipe for stuffed pepper soup. Ever heard of such a thing?

Stuffed Pepper Soup

Tbs chopped garlic
2 large green bell peppers
3 small onions
2 cups hamburger
1 tsp Italian seasoning
1 cup rice 2 cups water
1 1/2 jars of spaghetti or marinara sauce
1/2 cup crushed pineapple

Cut peppers and onions (depending on how you like them) into large pieces. Add all ingredients in large cooking pot. Bring to a boil for 1 minute, then cover and reduce temperature to med-low and cook for 45 minutes to an hour. Remember to stir often. You may also put this in a crockpot on low for 4-5 hours. You may need to add more water as it cooks- depending upon how thick or thin you like it. This is a very hearty dish that serves 6-7.
