Crockpot Artichokes with Butter Lemon Sauce

Pile some artichokes in your crock and go to town.

Crockpot Artichokes

2 large fresh artichokes
6 cups hot water
4 small lemons, sliced thin

With sharp knife, slice about 1" off top of each artichoke; cut off stem near base. With scissors, trim about 1/2" off top of each leaf. With sharp knife, halve each artichoke vertically; then scoop out and discard the fuzzy center of choke.

Place artichoke halves in your crock pot; add hot water and lemon slices. Cover and cook on HIGH 4 to 5 hrs. or until done. Drain and serve with Lemon Butter Sauce, as below...

Lemon Butter Sauce

1/3 cup melted butter
3 tbs lemon juice
1/4 tsp Seasoned salt

Combine all ingredients.

Mexican Crockpot Dinner

Here's a great Mexican fish featuring rice and beans, as well as meatballs.

Mexican Beans, Rice, and Meatballs

1 pound extra-lean ground beef
2 packages taco seasoning mix -- (1 1/4-ounce)
1/2 cup chopped fresh cilantro or parsley
1/2 cup plain bread crumbs
1/3 cup finely chopped carrots
3 1/2 cups water
1 can sliced ripe olives -- (2 1/4 ounce)drained
1 can diced green chiles -- (7-ounce)
6 garlic cloves -- minced
1 red bell pepper -- diced
2 cups converted white rice
1 can kidney beans -- (15-ounce) rinsed and drained

To make the meatballs, in a medium bowl, combine the ground beef, 1/2 package taco seasoning mix, cilantro, bread crumbs, carrots, and 1/2 cup of the water. Mix to blend well. Roll into 24 balls about 1 1/2 inches in diameter. Set aside.

For the beans and rice, in a 4- or 5-quart electric slow cooker, mix together the remaining 3 cups water with the remaining taco seasoning mix, olives, green chiles, garlic, bell pepper, and rice. Gently push the meatballs down into the rice mixture.

Cover and cook on the low heat setting 4 hours, or until the rice is just tender and the meatballs are cooked through.

Gently stir in the beans. Cover and cook 30 minutes longer.

Orange Glazed Carrots

Carrots with the glaze of orange in your crockpot.

Orange Glazed Carrots

3 cups thinly sliced carrots
3 Tbs butter
2 cups water
3 tbs orange marmalade
1/4 tsp salt
2 Tbs chopped pecans

Mix carrots water and salt in crock-pot. Cover and cook on high for 2-3 hours, or until carrots are done. Drain well; stir in remaining ingredients. Cover and cook on high for another 30 minutes.

Crockpot Fajitas

Spice up your kitchen with some Mexican crockpot fajitas, esse.

Crockpot Fajitas

1 1/2 lb beef flank steak
1 onion, sliced
1 green pepper, cut into strips
1 red pepper, cut into strips
1 jalapeno pepper, chopped
1 tbs cilantro
1 cloves garlic, minced
1 tsp chili powder
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp salt
8 oz can chopped tomatoes
A dozen 8" flour tortillas

Toppings: sour cream, guacamole, shredded cheddar cheese,
salsa

Cut flank steak into 6 portions. In any size crock pot, combine meat, onion, green pepper, red pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on low for 8-10 hours or on high 4-5 hours. Remove meat from crock pot and shred. Return meat to crock pot and stir. To serve fajitas, spread meat mixture on flour tortillas and add favorite toppings. Roll up tortillas. Serves 6-8.

Jerk Chicken

Chicken, all jerked out in style in the crockpot.

Crockpot Jerked Chicken

1/2 cup sliced green onions
2 tbs grated gingerroot
1 tsp ground allspice
3 fresh jalapeno chiles, seeded and coarsely chopped
1 tsp vegetable oil
2 tsp seasoned pepepr
1/2 tsp salt
1 clove garlic
1 Tbs honey
5 chicken thighs and drumsticks (joined together)
Cooked rice
Papaya (optional, peeled and sliced

In a blender or food processor, combine onions, gingerroot, allspice, jalapeno chiles, oil, seasoned pepper, salt and garlic. Process until finely chopped. Stir in honey to form a paste. Brush on all sides of chicken. Place a rack in a slow cooker. Place chicken on rack. Cover and cook on low 4 to 4 1/2 hours or until chicken is tender. Serve with rice. Garish with papaya.

Crockpot Salsa Chili

Salsa chili is hot in your crockpot.

Chunky Salsa Chili

1 pound beef boneless chuck, tip or round steak
1 large onion, chopped
2 cloves garlic, finely chopped
1 Tbs chili powder
2 tsp ground cumin
2 jars (16 ounces each) thick-and-chunky salsa
1 can (14 1/2 ounces) diced tomatoes, undrained
1 bell pepper, chopped
1 can (15 to 16 ounces) cannellini navy beans, drained

Trim excess fat from beef. Cut beef into bite-size pieces. Mix all ingredients except bell pepper and beans in 4 quart crockpot. Cover and cook on low heat 7 to 8 hours or until beef and vegetables are tender. Stir in bell pepper and beans. Uncover and cook on high heat about 30 minutes or until pepper is tender.

Crockpot Vegetable Ragout

Here's a recipe for... well, a quick story first. One time I left a rag in the oven and it caught fire... so I quickly had to take the rag out.

Green Vegetable Ragout

3 Tbs butter
1 large onion, sliced
1 seedless cucumber, sliced
3/4 lb zucchini, sliced
1 green pepper, seeded & cut in strips
1/2 cup apple cider
Salt and pepper

Melt butter in pan, add onion and cook until soft. Add remaining vegetables and cook for 5 minutes without browning. Stir in cider and season well. Turn into crockpot and cook on LOW for 5 - 7 hours.

Barbecue Green Beans

BBQ green beans in your crockpot make for a great barbecue time.

Barbecue Green Beans

2 slices bacon (real or vegetarian substitute)
1 small onion; chopped
1 garlic clove; minced
4 cups fresh green beans or - canned and drained
1 tsp seasoned salt; or to taste
1/2 tsp black pepper
3/4 cup prepared barbecue sauce

Cook bacon until crisp in a heavy skillet. Drain on paper towels, crumble and set aside. Saute onion and garlic in drippings.

Combine beans, bacon, onions, garlic, seasonings and barbecue sauce in a lightly greased crockpot. Cook on low for 6 to 8 hours or on high for 3 1/2 to 4 1/2 hours.

Crockpot Vegetarian Stuffing

Some stuffing that's vegetarian and made in your crockpot. Coming right up.

Vegetarian Stuffing

2 cups chopped celery
2 cups chopped onion
1/4 cup chopped parsley
2 (8 ounce) cans mushrooms, drained
12 cups stale bread, cut into cubes
1 tsp poultry seasoning
1 tsp dried thyme
1 1/2 tsp sage
1/2 tsp ground black pepper
1 1/2 tsp salt
1/2 tsp dried marjoram
2 eggs, beaten
4 cups vegetable broth

In a large skillet over medium heat, melt the butter. Saute the celery, onion, parsley and mushrooms until onions are soft.

In a large bowl, combine the bread cubes and vegetables. Add the poultry seasoning, thyme, sage, pepper, salt and marjoram. Toss together well. Add egg and enough broth to moisten.

Lightly pack into slow cooker; cover and cook on high for45 minutes. Reduce to low and cook for 4 to 8 hours. Makes12 servings.

Aruban Pork and Black Beans

Here's a recipe from Aruba.

Aruban Pork and Black Beans

1 pound black beans, cooked
1 pound boneless pork sirloin -- cut in 1" cubes
1 tsp chili powder
1 tsp ground coriander
2 tsp salt
1 onion, chopped
1 garlic clove, minced
16 ounces stewed tomatoes, broken up
2 cups water
Freshly-ground black pepper to taste
Fresh cilantro leaves

Put beans in crock pot. Toss pork with chili powder, coriander and salt. Lightly brown onion and garlic with pork in ungreased skillet. Mix tomatoes into crockpot with their juice. Add meat, pepper and 2 cups water. Cover and cook 9 hours on LOW. Ladle over rice and garnish with cilantro.

Crockpot Salmon

Herb up your salmon hardcore with this crockpot recipe.

Herbed Salmon

2 chicken bouillon cubes
1 cup boiling water
1 (16 ounce) can salmon, drained and flaked
2 cups seasoned stuffing croutons
1 cup grated Cheddar cheese
2 eggs, beaten
1/4 tsp dry mustard

Dissolve bouillon cubes in boiling water. Combine all ingredients; mix well. Pour into well-greased crockpot. Cover and cook on HIGH for 2 to 4 hours.

Crockpot Beef

Here's a unique beef crockpot recipe involving a walnut.

Beef in Walnut Sauce

4 lbs rump roast -- cubed
Seasoned flour
Olive oil
1/2 cup water
1 can (8-oz) tomato sauce
4-6 garlic cloves -- minced
1/3 cup cider vinegar
1 whole cinnamon stick
8 whole cloves
8 allspice
1 cup ground walnuts
1 tablespoon lemon juice
Sliced sourdough French bread -- toasted

Dredge meat in seasoned flour; shake off excess; heat oil in large frying pan; brown meat well. Transfer to crock-pot. Pour water into frying pan to loosen drippings. Add to crockpot with tomato sauce, garlic and vinegar. Place cinnamon stick, cloves, and allspice in a tea ball or cheesecloth. Add to pot. Cover. Cook on LOW 8 to 10 hours, or until very tender. If necessary, cook down pan juices. Add walnuts and lemon juice. Heat to serving temperature. Serve over buttered toast. Makes 12 servings.

Crockpot Fiesta Beans

Here's a beans recipe perfect for parties. And it's easy as it's made in the crockpot, and you can even serve it in the liner pot.

Fiesta Beans

1 can lima beans
1 can kidney beans
1 can butter beans
1 large can Bushes baked beans
1 cup catsup
1 tsp dry mustard
1/2 cup red wine
1/2 cup brown sugar
Crumbled cooked bacon -- to taste
1 large onion -- chopped

Put your lima beans in your crockpot with a can of kidney beans, a can of butter beans, a big can of Bushes baked beans, a cup of catsup, 1 tsp of dry mustard, 1/2 cup red wine, 1/2 cup brown sugar, crumbled bacon to taste, 1 lrg chopped onion. Cook all day in crockpot.

I hate butter beans and lima beans, but I like this! It's great for parties and barbecues where you can let guests serve themselves out of the pot and they can be kept warm without burning on low.

Crockpot Green Beans

3 cans cut green beans, drained
1 can (10 1/2 oz.) French onion rings crumbled
3 cups grated cheddar cheese
3 8-oz cans water chestnuts
3 cans cream of chicken of mushroom soup
3/4 cup milk
3/4 tsp pepper

In your crock pot, layer in the green beans, onion rings and water chestnuts. Combine the mushroom soup, milk and pepper in a small bowl. Pour soup mixture over top of green beans. Do not stir. Cook on low 6 hours or high for 3 hours.

Skinned chicken thighs
1 pound mushrooms -- cleaned, halved vertically
1 large onion -- cut into large chunks
2 large carrots -- sliced
1 celery rib (with leaves) -- sliced
Apricots -- dried
1 package Onion Soup
Apricot nectar -- (to cover)

Place chicken pieces on bottom of crock pot. Sprinkle with the dried soup. Cover chicken with the nectar. Place veggies on top. Cook for 6-7 hours on low.

Crockpot Dumplings

If you love dumplings, you'll love this crockpot recipe.

Dumpling Soup

1 lb beef stew meat, cut into 1" chunks
1 package Lipton's onion soup mix
6 cup hot water
2 carrots peeled and shredded
1 stalk of celery, finely chopped
1 tomato, peeled and chopped
1 cup biscuit mix (I use Bisquick)
1 Tbs finely chopped parsley
6 tb milk

In crockpot, sprinkle beef with dry onion soup mix. Pour hot water over meat. Stir in carrots, celery and tomato. Cover and cook on low 4-6 hours or until meat is tender. Turn control to high. In a small bowl, combine biscuit mix with parsley. Stir in milk with fork until mixture is moistened. Drop dumpling mixture into crockpot with a teaspoon.Cover and cook on high for 30 minutes.

1 pound ground beef (extra lean)
28-oz can baked beans
8-oz can pineapple tidbits, drained
1 large onion, chopped
1 large green pepper
1/2 cup barbecue sauce
2 Tbs soy sauce
1 garlic clove, minced
1/2 tsp salt
1/4 tsp pepper

In skillet, brown beef, drain. Transfer to crock pot. Add remaining ingredients, and mix well. Cover and cook on low for 8 hours. Serve in bowls.

Macaroni and Cheese

Macaroni and cheese is always fun to make. Try it in a crockpot.

Macaroni and Cheese

8 ounces elbow macaroni, cooked and drained
1 12-oz can evaporated milk
1 1/2 cups milk
2 eggs
4 cups shredded cheddar cheese -- divided
1 tsp salt
1/2 tsp black pepper

Place the cooked macaroni in a slow cooker that has been coated with nonstick vegetable spray. Add the remaining ingredients except 1 cup of the cheese; mix well. Sprinkle with remaining 1 cup cheese, then cover and cook on the Low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. Do not remove the cover or stir until the macaroni has finished cooking.

Japanese Lamb

Here is a great crock recipe for slow-cooked Japanese lamb.

Japenese Lamb

2 lb lamb
1/4 cup soy sauce
1 tbs honey
2 tbs vinegar
2 tbs sherry
2 garlic cloves, crushed
1/4 tsp ginger, ground
1 1/2 cups chicken stock

Put all ingredients in crockpot and cook all day on LOW. Sylvia's comments: I converted this from a marinate-and-broil recipe that required better meat. This worked great on cheap stew lamb; it actually took away the strong lamb taste. I defatted the crockpot juices, thickened with cornstarch, and used it on green beans. That with the lamb and some yellow rice made a great dinner.
