Crockpot Roasted Veggies

Slow cooked roasted veggies are one of the best cooked vegetables for your body.

Roasted Veggie Trio

3 cups (15 oz) sliced raw potatoes
3 cups sliced carrots
1-3/4 cups (one 15 oz can) vegetable or beef broth
1/2 cup chopped onions

In your crockpot, combine potatoes, carrots, and onion. Pour your choice of broth evenly over top. Cover and cook on HIGH for 4-6 hours. Mix well before serving.

Crockpot Banana Pudding

Here's a crockpot recipe for banana pudding.

Banana and Apple Pudding

2 medium size apples, grated
4 Tbs ground almonds
2 ripe bananas
2 tsp grated coconut
1 tsp finely grated orange peel

Combine grated apple and ground almonds and mix with 1 1/2 bananas cut into small pieces. Put into a mold to give it shape. Turn pudding out on a plate and sprinkle with grated coconut and grated orange peel. Decorate with thin slices of the remaining half banana. Let stand at least 15 minutes before serving.

Crockpot Pumpkin Cake

Time for some pumpkin cake in your crockpot.

Pumpkin Cake

1 cup of pumpkin
4 eggs
2 tsp cinnamon
1 tsp baking soda
2 Tbs baking powder
1 cup of oil
1/2 cup of orange juice
2 and 1/4 cups of flour

Grease your crock pot and set it on high.

Mix all together and layer mixture with canned fruit. I use a layer of apples then a layer of peaches until it is all used.

Cook it for 2-21/2 hours on high.

Serve warm with cool whip or ice cream.

You can use box cake mix and use canned fruit and layer the same way, possibly chocolate cake mix and cherries layered making a black forest cake.

Fennel Barley Soup

Ok, pick one... fennel or barley? Well, ok, I guess you can use both.

Fennel and Barley Soup

2 medium fennel bulbs, trimmed and chopped
2 medium zucchini, chopped
1 large onion, chopped
1/2 cup barley
2 cloves garlic, minced or pressed
1 Tbs fennel head, snipped
1/4 tsp black pepper
4 cups low-sodium V-8 juice
2 cups water
1 (14.5 ounces) can vegetable broth or chicken broth

Toss everything in your crock pot. Cook on Low for 8- 10 hours or High for 4 to 5 hours.

Italian Stuffed Zucchini

Stuff a zucchini, kiss an Italian, and put it all in your crockpot.

Italian Stuffed Zucchini

1 medium zucchini or summer squash, halved lengthwise, with seeds removed
1 cup tomato sauce
1 Tbs red wine vinegar
1 small onion, chopped
1 tsp garlic, minced
1/4 cup uncooked brown rice
1 Tbs dried parsley
1 Tbs dried basil
1/8 tsp black pepper
2 Tbs pine nuts, toasted
Fresh parsley (optional)
Fresh basil (optional)
Mozzarella cheese (optional)
Parmesan cheese (optional)

To toast pine nuts, place them in a small nonstick skillet over medium heat, stirring occasionally until golden or about 5 minutes. Place the zucchini halves in the bottom of an oval shaped slow cooker. In a small bowl or measuring cup, combine the tomato sauce and vinegar. In another small bowl, combine the onions, garlic, rice, parsley, basil, pepper, along with 2 tablespoons of the tomato sauce-vinegar mixture. Fill the zucchini halves with the rice mixture. Top with the remaining tomato sauce-vinegar mixture. Cover and cook on LOW until the rice is tender, 4 to 6 hours. Garnish with the pine nuts, fresh herbs, and cheese. Makes 2 main dish servings or 4 side dish servings.

Chinese Cashew Tuna

Here's a unique recipe from China involving tuna, cashews, and your trusty crockpot.

Chinese Cashew Tuna

7 ounces tuna in water -- drain/flake
1 cup celery -- diced
1/2 cup onions -- minced
3 Tbs butter
1 can cream of mushroom soup -- condensed
1 can(16oz) bean sprouts -- drained
1 tablespoon soy sauce
1 cup cashews -- coarsely chop
1 can chow mein noodles.

Combine all ingredients except chow mein noodles in crock pot; stir well. Cover and cook on Low setting for 4 to 9 hours. Serve over chow mein noodles.

Crockpot Beef Stroganoff

This beef stroganoff for your crockpot is one hulk of a recipe.

Hulk Beef Stroganoff

1 1/2 to 2 1/2 lbs boneless beef chunk or round steak
1 tsp salt
1/8 tsp pepper
1/4 tsp garlic salt
1 Tbs Worcestershire sauce
1 1/4 to 1 1/2 cups beef bouillon
1 Tbs catsup
2 Tbs dry white wine
1/4 pound sliced fresh mushrooms
1/3 cup flour
1 cup sour cream
Rice or noodles to serve 5 or 6

Cut beef in strips or cubes. Coat with salt and pepper. Place in bottom of crockpot. Mix garlic salt, Worcestershire sauce, beef bouillon and catsup. Pour over meat. Cover and cook on Low for 6 to 8 hours until tender. Turn up to High. Add 2 Tbs dry white wine and mushrooms. Dissolve flour in small amount of water. Add to meat mixture. Stir to blend. Cook on High for 15 minutes until slightly thickened. Stir in sour cream. Turn off heat. Serve with rice or noodles.

Crockpot Mexicali Rice

Ever had Mexicali Rice? Me neither, but it sounds intriguing.

Mexicali Rice

1 can (15 1/4 oz) whole kernel corn, drained
1 can (15 oz) black beans, rinsed and drained
1 can (4 oz) diced green chilies
1 medium onion, chopped
1 red bell pepper, chopped
2 cups brown rice
3 1/2 cups boiling water
1/2 cup thawed frozen orange juice concentrate
6 Tbs fresh lime juice (from about 3 limes)
1 1/2 tbs ground cumin
1 tbs chili powder
1/3 cup chopped fresh cilantro
1/2 tsp salt

In your crock pot, mix together the corn, black beans, green chilies, onion, bell pepper, rice, boiling water, orange juice concentrate, 1/4 cup of the lime juice, the cumin, and the chili powder.

Cover and cook on the low heat setting 2 3/4 to 3 hours. Stir in the remaining 2 tbs lime juice, the cilantro, and salt. Mix well. Serve hot.

Crockpot Pears

For an elegant dessert, place each pear upright on a pretty dessert plate. Spoon the sauce around the pear, and sprinkle with chopped toasted nuts or coconut. Spoon a big dollop of soft whipped cream alongside the pear, and garnish the plate with a twisted orange slice.

Maple Pears

6 pears
1/2 cup packed brown sugar
1/3 cup maple syrup
1 Tbs butter, melted
1 tsp grated orange peel
1/8 tsp ground ginger
1 Tbs cornstarch
2 Tbs orange juice

Peel pears. Core pears from bottom, leaving stems attached. Place pears upright in your crockpot.

Mix remaining ingredients except cornstarch and orange juice; pour over pears. Cover and cook on high heat setting 2 to 2 1/2 hours or until tender.

Remove pears from cooker; place upright in serving dish or individual dessert dishes.
Mix cornstarch and orange juice; stir into sauce in cooker. Cover and cook on high heat setting about 10 minutes or until sauce is thickened. Spoon sauce over pears.

Makes 6 servings .

For a honey of a pear, use 1/4 cup honey instead of the maple syrup for a sweet change of pace.

Crockpot German Potato Salad

Getting bored with potato salad this summer? Try this german kind, it's made for your crockpot.

German Potato Salad

2 potatoes, sliced
1/2 cup onions, chopped
1/2 cup celery sliced
1/4 cup green peppers, diced
1/4 cup vinegar
1/4 cup oil
Chopped parsley
Sliced bacon, cooked and crumbled

Combine all ingredients except parsley and bacon. Add salt and pepper to taste. Stir and cook for 5-6 hours on low in crockpot. Garnish with bacon and parsley.

Malted Roast

Malted Roast

1 beef roast
1 can cream of mushroom soup
1 can cream of onion
1 small jar sliced mushrooms
1 small can of beer or 1/2 can beer

Combine all ingredients in a crockpot and let cook on LOW all day.

Crockpot Cheese Potatoes

Ok, so you like potatoes, but would you like cheese with that?

Cheddar Cheese Potatoes

12 medium potatoes (4 lb.)
1 large onion -- sliced thin
1/2 cup flour
2 tsp seasoned salt
1/2 tsp pepper
4 Tbs butter
2 whole cans cream of mushroom soup
1/2 to 3/4 lb grated cheddar cheese

Mix flour, seasoned salt and pepper. Slice potatoes. Toss slices in 2 cups water with 1 teaspoon cream of tartar; drain. Grease crockpot. Layer potatoes, onion, flour mix-ture, and repeat. Add butter, then add soup (not diluted). Cover and cook on low 7 to 9 hours or on high 3 to 4 hours. Thirty minutes before serving, add grated cheese.

Crockpot Sweet and Sour Cabbage

Do you like it sweet? Or do you like it sour? Perchance you like it... both? Try some sweet and sour cabbage in your trusty old crockpot.

Sweet and Sour Cabbage

1/4 cup brown sugar
2 Tbs flour
1 tsp salt
1/8 tsp pepper
1/2 cup water
1/4 cup vinegar
1 medium head red cabbage shredded
1 small onion finely chopped

In your crockpot, combine sugar, flour, salt and pepper. Stir in water and vinegar. Add cabbage and onion and stir to combine. Cover and cook on low 3-4 hours. If you're not a vegetarian, sprinkle 4 diced slices of crispy cooked bacon on top just before serving. Serves 6 to 8.

Crockpot Stuffed Peppers

Stuff up some green peppers this summer in your crockpot.

Stuffed Green Peppers

1 package (10 oz) frozen corn kernels
1 can (15 oz) red kidney beans drained and rinsed
1 can ( 14.5 oz) diced tomatoes
1/4 cup salsa
1/4 cup chopped onions
1 1/2 cups cooked rice
1 tsp Worcestershire sauce
1/4 tsp salt
1/2 tsp pepper
2 cups shredded reduced fat Cheddar cheese, divided
6 green peppers. tops removed & seeded

Combine all ingredients, except 1/4 cup cheese and green peppers. Stuff peppers. Arrange peppers in crockpot. Cover, cook on low 6-8 hours (high 3-4 hours). Sprinkle with 1/4 cup cheese during the last 30 minutes. Makes 6 servings.

Chuck Wagon Bean Pot

For my fellow Americans, I hope you had a nice Fourth weekend... four-day weekend, anyone? Here's a red-blooded American recipe featuring a chuck wagon and beans.

Chuck Wagon Bean Pot

1 lb favorite dry beans
1 ham hock or shank
1 lg onion, chopped
6 cups water
1 tsp salt
7 to 10 oz green chili salsa or
7 to 10 oz tomato sauce, canned or stewed tomatoes

Rinse the beans and remove any foreign matter. Soak overnight and drain water in morning. Then add all other ingredients and mix together.

Cover, set temperature at low, and forget for at least 10 hours. If you have only half a day, cook the mixture 5 or more hours on high.

When beans are done, take out ham bone, cut off the meat and put it back into the pot. Serve hot with corn bread or muffins. Green chili salsa is a Mexican sauce made from green chili peppers, onions, vinegar and other ingredients.
