Ever had baked beans made in the crockpot?

Crockpot Baked Beans

3 cups (1 1/2 lbs) beans (pea, navy, or great northern)
1 medium onion, chopped
1/2 cup catsup
1/2 cup brown sugar (dark or light works fine)
1 cup water
2 Tbs dry mustard
2 Tbs molasses
1 Tbs salt
1 inch of fresh ginger, minced

Wash and sort beans. Cover with water and bring to a boil. Boil 2 minutes and remove from heat. Let soak 1 hour. Bring to a boil again and then simmer approx. 45 min or until cooked but not soft or mushy.

Drain beans. Put in the crockpot.

Mix the rest of the ingredients together and stir into the beans. Turn on low and cook 10 - 12 hours.

Crockpot Chicken Gumbo

Today's recipe is for crockpot chicken gumbo.

Crockpot Chicken Gumbo

4 chicken breasts
2 Tbs oil
2 Tbs flour
1/2 cup celery
1/2 cup bell pepper
2 cups fresh tomatoes
1 (16 ounce) can tomato sauce
1 small package frozen whole okra

Brown chicken pieces in 2 tablespoons oil. Remove chicken. Add 2 tablespoons flour to make light brown roux. Saute following vegetables in roux until wilted: 1/2 c. celery 1/2 c. bell pepper Chopped fresh parsley Add to this 2 cups fresh tomatoes, quartered, plus juice, 16 oz. can tomato sauce, 1 package frozen whole okra and bring to a boil. Add chicken and cook in crockpot for 4 hours on low.

Crockpot Pizza

Ever wanted to try pizza in the crockpot?

Crockpot Pizza

1 1/2 lb. hamburger, browned and drained
2 lg. bags Mozzarella cheese
1 chopped onion
1 pkg. sliced pepperoni
2/3 box rigatoni noodles, cooked
1 can cream of mushroom soup
1 can mushrooms
2 cans pizza sauce

Alternate layers in crockpot as follows: hamburger, noodles, cheese, soup, mushrooms, onions, sauce and pepperoni. Heat 4 hours on low in crock pot.

Crockpot Mustard Roast

Today's recipe was nominated for the best mustard crockpot roast of Rhode Island back in 1995.

Crockpot Mustard Roast

2 1/2 lb beef boneless chuck roast
1/2 tsp salt
1/4 tsp pepper
1 Tbs olive oil
4 onions, sliced
1 cup beef broth
1/2 cup beer or apple juice
1 Tbs brown sugar, packed
1 Tbs cider vinegar
2 Tbs dijon mustard

Cook beef in oiled skillet 5 minutes, turning once, until brown. Season with salt and pepper; remove from skillet.

Reduce heat to medium. Add oil to skillet. Cook onions in oil 12 to 14 minutes, stirring frequently, until brown. Stir in broth, beer, brown sugar, vinegar and mustard. Spoon half of the onion mixture in 4-5 quart crock pot. Place beef roast on onions. Spoon remaining onion mixture on beef. Cover and cook on low heat setting 8 to 9 hours or until meat is tender.

Crockpot Beer Roast

Wow, today's recipe is for a malted crockpot beer roast. You can substitute N/A beer too, but there's really no need--much of the alcohol content is cooked out during the process.

Crockpot Beer Roast

1 beef roast
1 can cream of mushroom soup
1 can cream of onion
1 small jar sliced mushrooms
1 small can of beer or 1/2 can beer

Combine all ingredients in a crockpot and let cook on LOW all day.

Macaroni Casserole

You can make a yummy macaroni casserole in your crockpot.

Macaroni Casserole

2 lb ground beef
1 cup onion -- chopped
1 1/2 cup water
1 clove garlic -- minced
1/4 cup green pepper -- chopped
2 can tomatoes -- chopped, 1lb ea
1 cup tomato juice
Salt and pepper
1/2 tsp Oregano
2 cup macaroni -- uncooked

Brown the meat, onion, green pepper, garlic and drain. Combine tomatoes, juice and the drained meat mixture. Stir in the seasonings. Mix well and place in crockpot and cook low for 6 to 8 hours. Stir in uncooked macaroni and cook 2 to 3 hours more.

Crockpot Scalloped Potatoes

Today's recipe is all about crockpot scalloped potatoes.

Crockpot Scalloped Potatoes

6 cups shredded potatoes (or frozen hash browns)
2 cups cut green beans (16 oz can), rinsed, drained
1/4 cup finely-chopped onion
1 tsp dried parsley flakes
1 can cream of celery soup (10 3/4 oz)
1 can stewed tomatoes (14 1/2 oz), undrained

In a slow cooker, combine hash browns, green beans and onion. In a medium bowl, combine parsley flakes, celery soup and undrained stewed tomatoes. Add soup mixture to potato mixture. Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before serving.

Wild Game Chili

I'm not quite sure if it's deer season, but here's a game recipe. You can put all that leftover deer or elk in the crockpot and make up a batch of delicious chili.

Wild Game Chili

1 lb. ground deer or elk meat, browned and drained (you
can also use lean, ground beef, it works also)
1 large green bell pepper, chopped
6-8 large cloves garlic, minced
1 Tbs brown sugar
1 large onion, peeled and chopped
1 can (26 oz. size) Ranch-style beans
1 can (15 oz. size) Ranch-style pinto beans with jalapenos
1 cup chopped celery
1 ( 14 1/2 oz. can) Mexican style stewed tomatoes
2 Tbs vinegar
2 heaping tsp chili powder

Brown elk/deer meat until almost done, add garlic, onion, celery and green pepper, cook till slightly soft. Place in a large crockpot with all the rest of the ingredients, (I usuall put the stewed tomatoes in the blender and blend well, my husband doesn't like large pieces of tomato in his chili), cover and cook on low for 8-10 hours. The last hour or so, you can remove the lid and let it cook on high till it becomes the thickness you like for your chili. Can be served with cornbread and either creamettes, or some other kind of noodle, or crackers, along with a salad.

Crockpot Nectarine Salsa

Today's recipe is for delicious and sweet nectarine salsa.

Crockpot Nectarine Salsa

8 pounds nectarines, peeled & chopped
3 medium onions, diced
1 jalapeno pepper, chopped & seeded
1 jalapeno pepper, chopped & unseeded
Juice of 3 limes
1/2 cup dry cilantro

Mix everything together and cook in crock pot on high for 2-1/2 to 3 hours. Ladle into hot sterilized canning jars. Process in hot water bath for 10 minutes. Makes 6 pints.

Northern White Chili

This crockpot chili recipes hails from the north, but it's cooked in the south of your crockpot.

Northern White Chili

1 tsp olive oil
1 small onion, chopped
2 cloves garlic, minced
6 (15-oz) cans great northern beans, undrained
1 (4.5-oz) can chopped green chilies
1 tsp vegetarian chicken-flavored broth mix
2 tsp chili powder
1/8 tsp liquid smoke

Saute onion and garlic in olive oil and then combinewith other ingredients in your crockpot. Cook on low all day.

Crockpot Barley Soup

2 medium fennel bulbs, trimmed and chopped
2 medium zucchini, chopped
1 large onion, chopped
1/2 cup barley
2 cloves garlic, minced or pressed
1 Tbs fennel head, snipped
1/4 tsp black pepper
4 cups low-sodium V-8 juice
2 cups water
1 (14.5 ounces) can vegetable broth or chicken broth

Toss everything in your crock pot. Cook on Low for 8- 10 hours or High for 4 to 5 hours.

Veggie Gumbo

Can you imagine would Martin Luther would say about this vegetarian gumbo crockpot recipe?

Lutheran Veggie Gumbo

1 onion, chopped
1/2 green peppers, diced
2 celery ribs, diced
1 clove garlic, minced
1 lb okra, sliced, fresh,frozen
1 lb tomato, fresh, or canned
2 cups corn, fresh, frozen, or canned
1 tsp vegetable bouillon granules
1/2 cup white grape juice
1/2 cup water
1/4 tsp Tabasco sauce
1/4 tsp paprika
2 Tbs chopped fresh parsley
1 Tbs basil or rosemary, minced

In a skillet or pot, place bouillon and white grape juice, onion, green pepper, celery, garlic, and cook until tender, 5-7 minutes. Once tender, move to crockpot and add other ingredients and cook on low for 6-7 hours or until until corn and okra are done. If you use dried herbs, rub them with the palms of your hands before adding to the pot, this releases their mojo.

Creole Steak Tips

How about some recipe tips on how to make creole steak tips a la crockpot?

Creole Steak Tips

1 1/2 pounds boneless round steak
Salt and pepper
1 onion -- chopped
1 cup sliced celery
1 cup seasoned tomato juice
2 tsp Worcestershire sauce
1/8 tsp garlic powder
1 medium green pepper -- chopped
10 ounce pkg. frozen okra (or 1 1/2 c. fresh)
2 1/2 ounce can sliced mushrooms -- drained
carrot curls (opt.)

Cut steak into strips, about 1/2" wide and 2" long. Sprinkle with salt and pepper. Place in crockpot with onion, celery, tomato juice, Worcestershire sauce and garlic powder. Cover and cook on Low for 6-8 hours. Turn control to High. Add green pepper and partially thawed okra and mushrooms. Cover and cook on High for 30 minutes until okra is done. Garnish with carrot curls, if desired.

Crockpot Red Beans and Rice

It's not Monday, but this red beans and rice crockpot recipe is good any day of the week.

Crockpot Red Beans and Rice

1 lb red kidney beans -- soaked overnight in water
1 1/2 cup white or brown rice
16 oz tomato, stewed
1 ham hock
1 tsp basil
1 tsp Thyme
1 onion -- chopped
2 garlic clove -- OR
1/4 tsp garlic powder
White pepper to taste
Salt to taste
1/2 cup white wine

I put everything in the crockpot at the same time, except for the rice. Turn on high for 4 hours, then on low for 6 hours. During the last 1 1/2 hour, put in the rice. The final ingredient is about 1/2 cup of white wine. You can add this whenever. It is optional, of course. I really like it spicy so I add 1/8 tsp red pepper.

Crockpot Vegetable Casserole

Crockpot Vegetable Casserole

2 cups carrots, cut in strips, cooked and drained
2 cups celery, diced
1 onion, diced
1/4 cup green pepper, diced
1 pint tomato juice
4 cups green beans, drained
1 tsp salt
Dash of pepper
3 Tbs tapioca (to thicken)

Mix all ingredients together in crockpot. Dot with 2 tablespoons butter and cook on low for 8-10 hours or on high for 4-5 hours.

Crockpot Kidney Bean Stew

Kidney beans are great for stew. Try them in your crockpot.

Crockpot Kidney Bean Stew

1/2 cup kidney beans dried
1/2 cup large limas or butter beans dried
1/2 cup great northern beans dried
2 cans stewed tomatoes 15 oz approx. ea.
1/4 cup bacon bits or chopped up bacon
1/8 - 1/4 teaspoon hickory smoke flavor
1 stalk celery chopped
1 small red onion chopped
1 medium bay leaf
1 can tomato paste
1/2 tsp garlic powder (optional)

Soak beans using whatever method you prefer. After soaking put drained beans in crockpot Combine 4-6 cups of soaking water with the tomato paste.

Add bacon bits to pot. In separate skillet saute peppers, onion, celery in enough oil to prevent sticking. Add a drop or two of hickory smoke flavor.

Saute until soft but not browned. Add to beans. Add stewed tomatoes, bay leaf and garlic powder.

Cook on medium for 6-8 hours on medium. Serve with crusty bread. Serves 6.

Crockpot Spanish Rice

Hey, did you know you can make delicious Spanish rice in your crockpot?

Crockpot Spanish Rice

2 pounds lean ground chuck
2 medium onions, chopped
2 green peppers, chopped
2 cans (14 1/2 ounces) tomatoes
1 can (8 ounces) tomato sauce
1 cup water
2 1/2 teaspoons chili powder
2 1/2 teaspoons salt
2 tsp Worcestershire sauce
1 cup rice, (not Minute Rice)

Brown beef in skillet and drain off fat. Put all ingredients in crock-pot. Stir thoroughly. Cover and cook on Low 6 to 8 hours. (High: 3 hours).

Tomato Crockpot Soup

Make up a good batch of tomato cabbage soup in your crockpot.

Tomato Cabbage Soup

2 Tbs butter
1 1/2 cups chopped onion
2/3 cup chopped celery
2 14-oz cans tomatoes
6 cups grated cabbage
1 cup green beans, cut into bits
1 1/2 cups sliced carrot
1/4-1/2 cup chili sauce (to spice it up)
1/2 tsp salt
8 cups water
2 Tbs beef bouillon
1/4 tsp oregano
1/4 tsp basil

Melt butter in large pot. Saute onions and celery until soft. Add onions and celery and remaining ingredients to crockpot. Cook all day on low, stirring occasionally if you're at home.
