Crockpot Stuffed Peppers

Today's recipe is for crockpot stuffed peppers.

Crockpot Stuffed Peppers

1 package (10 oz) frozen corn kernels
1 can (15 oz) red kidney beans drained and rinsed
1 can ( 14.5 oz) diced tomatoes
1/4 cup salsa
1/4 cup chopped onions
1 1/2 cups cooked rice
1 tsp Worcestershire sauce
1/4 tsp salt
1/2 tsp pepper
2 cups shredded reduced fat
Cheddar cheese, divided
6 green peppers, tops removed & seeded

Combine all ingredients, except 1/4 cup cheese and green peppers. Stuff peppers. Arrange peppers in crockpot. Cover, cook on low 6-8 hours (high 3-4 hours). Sprinkle with 1/4 cup cheese during the last 30 minutes. Makes 6 servings.

Cheesy Broccoli

Here's some crockpot cheesy broccoli for you today.

Cheesy Broccoli

1 lb cauliflower, frozen
2 10-oz packages broccoli, frozen
1/2 cup water
2 cups cheddar cheese, shredded

Place vegetables in crockpot and add water. Top with cheese. Cook on LOW 1 1/2 hours to 3 hours, depending on how crunchy you like your vegetables. I usually cook for 2 hours.

Porked Crockpot Kraut

Today's recipe is something different, and special. Sour kraut and pork made via crockpot.

Porked Crockpot Kraut

2 potatoes, wash & slice
1/4 cup onion -- chopped
1 1/2 cup sauerkraut, rinsed & drained
1 Tbs brown sugar
1/2 cup unsweetened pineapple juice
2 thick pork chops, trimmed
Pepper

Put potatoes in crockpot. Top with chopped onion. Combine sauerkraut (1 can), with brown sugar and pineapple juice. Spoon over potatoes. Top with pork chops which have been trimmed of fat. Season with pepper to taste. Cover and cook on low 8-10 hours.

Serve with rye bread and baked apples.

Eastern European Bean Soup

Drop the iron curtain a little and try this crockpot bean soup.

Eastern European Bean Soup

2 cups dried lima beans
8 cups cold water
1 large onion, roughly chopped
1 carrot, peeled and quartered
2 garlic cloves, crushed
1 Knorr vegetable bouillon cube
1 tbs butter
1 medium onion, finely diced
2 tsp kosher salt (optional)
Freshly-ground black pepper to taste

Soak lima beans in cold water overnight. Drain the lima beans and rinse in several changes of water to float away as many loosened shells as possible. Place beans in crockpot with 8 cups fresh water, the chopped onion, carrot, garlic and bouillon cube. Cover tightly and cook 18 to 24 hours, until beans are very tender. Remove from heat and let cool a little. In the meantime, heat the butter in a skillet and saute the finely diced onion until it is very brown.

Ladle a small amount of soup at a time into blender or bowl of a food processor and puree until all soup is pureed. Return to pot and stir in browned onions. Taste for seasoning and add salt and pepper to taste. Makes 8 to 10 servings.

Crockpot Couscous

Couscous in your crockpot.

Crockpot Couscous

1 Tbs dried onion flakes
2 carrots chopped
1 can diced tomatoes
1 can garbanzos drained
1 veggie boullion cube
1 Tbs diced garlic
1/4 tsp nutmeg
1/4 tsp cinnamon
1 tsp cumin
1/2 tsp tumeric
1/4 cup raisins
1 1/2 cups cooked couscous

Put all ingredients except for couscous into the crockpot. Spray the crockpot with pam, so the mixture dosn't stick. Cover and put on the high setting for 3 hours. After 3 hours, stir the mixture, shut off the crockpot, and then add the cooked couscous. Let set for 10 minutes.

Crockpot Venison

How about a game recipe today? Crockpot venison.

Crockpot Venison

1 stick butter
1 cup flour
1 can beer
1 deer steak or any cut of meat

Melt butter in crock pot. Place meat in butter, add flour over this. Pour beer over all, put the lid on and leave it alone. Preferrably, cook overnight, but can begin cooking early in the morning.
