Vegetable Soup w/ Beef Stock


Ingredients:

1 onion, sliced
2-3 carrots, chopped
Shitake, baby bello, and oyster mushrooms
1 bay leaf
2 cloves of garlic, crushed
1/8 cup fresh Italian parsley, minced finely
Salt and pepper to taste
Organic, high quality beef broth
Cooked rice

Mushroom and Beer Roast


Ingredients:

1 onion, quartered
2-4 new potatoes, cut in half
1 cup shiitake or white button mushrooms
2-3 medium carrots, chopped
Salt and pepper and Italian seasoning to taste
2 Tbs olive oil
1 cup beer

Place vegetables at bottom of crockpot. Rub spices all over roast and sear. Place roast in crockpot and add beer. Cook all day -- 7-8 hours on low, 4-5 hours on high.

Orange Juice Chicken

Orange Juice Chicken

3-4 lb chicken cut into serving pieces
1 cup chicken broth, homemade or canned
1/4 lb butter
2 cups orange juice
1 cup raisins (I used sultanas)
Salt and fresh black pepper to taste
1/4 tsp cinnamon
2 Tbs flour

Heat butter in large skillet, and brown chicken. Remove chicken pieces to slow cooker as they brown. Combine all other ingredients, except flour, mix well and pour over chicken. Cover pot, turn on LOW and cook 4-6 hours, or until chicken is tender. Remove 1 cup of sauce from the pot and combine with flour, mixing well. Return sauce -flour mixture to pot. Turn pot on HIGH, and cook additional half hour.

Green Bean and Potato Casserole

About 6 cups fresh trimmed and cut green beans OR 2
16-ounce packages frozen cut green beans
4 to 6 medium red-skinned potatoes, sliced about 1/4"
1 large onion, sliced
1 tsp dried dill weed
1 tsp salt
1/2 tsp pepper
1 can cream of chicken soup or other cream soup, undiluted, or use about 1 cup of homemade seasoned white sauce, veloute or cheese sauce
1 Tbs butter

Spray the pot with cooking spray or lightly grease with butter. Layer sliced potatoes, sliced onion and green beans, sprinkling with dill and salt and pepper as you go. Dot with butter, about 1 tablespoon total, and add about 2 tablespoons of water. Cover and cook on HIGH for 4 hours (LOW about 8 hours). Stir in soup or sauce; turn to LOW and cook an additional 30 minutes. Serves 6 to 8. Optional: Add bits of cooked bacon for extra flavor.
