Low Fat Curried Vegetables

Low Fat Curried Vegetables

3 cups coarsely chopped red potatoes
2 cups peeled and coarsely chopped sweet potatoes
1 cup coarsely chopped carrot
1/2 cup chopped onions
3 cloves garlic, minced
1 Tbs grated fresh ginger
1 1/2 tsp salt2 tsp curry powder
1/2 tsp ground cumin
1 (14-oz) can vegetable broth
1 (13.5-oz) can unsweetened coconut milk
1 1/2 cups quick-cooking rice
1 cup frozen peas
1/2 cup dry-roasted cashews

Add the first 9 ingredients to your crockpot; stir the ingredients to mix them up. Pour the broth and coconut milk over the vegetable mixture. Cover and cook on LOW for 7-8 hours. Stir in the rice and frozen peas; cover and cook 5 more minutes. Ladle mixture onto individual plates and sprinkle with cashews.

Low Carb Beef Stroganoff

Low Carb Crockpot Beef Stroganoff

1 1/2 to 2 pounds stew beef or round steak or lean chuck, cut in 1/2-inch cubes
3 Tbs flour
2 Tbs butter
1 cup beef broth
2 Tbs ketchup
1 sm. garlic clove, crushed
1 tsp salt
8 oz. sliced mushrooms
1 med onion, chopped
1 cup sour cream, blended with 2 Tbs flour
Hot cooked noodles, 3 to 4 cups

Dredge beef in flour and salt. Melt butter in large skillet and add beef and onion. Cook over medium heat until browned. Combine beef broth, ketchup, garlic and mushrooms in crockpot. Add cooked beef and onions; stir gently to combine. Cover and cook on low for 7 to 9 hours. Add sour cream, cover and cook on HIGH for 20 to 30 minutes, or until heated through. Serve over hot cooked noodles. Serves 6 to 8.

Crockpot Chickpea Soup

It's winter and it's the perfect time for soup. Here are nine more crockpot soup recipes.

Crockpot Chickpea Soup

2 1/2 cups dried garbanzo beans or 3 (15 ounces) cans chickpeas
2 Tbs olive oil
2 cups chopped onions
8 cloves garlic (pressed or minced)
2 cups vegetable stock
2 cups water or additional vegetable stock
2 tsp chopped fresh rosemary or 1/2 teaspoon dried rosemary
1/4 tsp pepper (freshly ground is always better)
1 (15-ounce) can diced tomatoes (undrained)
3 Tbs balsamic vinegar
1 1/2 ounces grated fresh parmesan cheese (6 Tbs)

Soak dried garbanzo beans in water to cover overnight. Rinse and inspect the beans and set aside. In a skillet heat the olive oil over medium heat, add the garlic and onion and cook for 10 minutes, stirring frequently. Put the onion mixture, garbanzo beans, and next 5 ingredients in your crockpot. Simmer in the crockpot for 2 to 4 hours. (I will start this on low in the morning, and turn up the heat when I come home for lunch). To make the soup thicker, blend 4 cups of the soup in a blender, 1 cup at a time (very carefully, this is hot soup!) then place all 4 cups back into the soup. Stir in the balsamic vinegar and let the soup simmer another 15 minutes. (this is the perfect time to throw together a salad). Place the soup in bowls (1 1/2 cups for 6 servings) and sprinkle with parmesan (1 Tbs).

Crockpot Burgandy Beef Stew

Crockpot Burgandy Beef Stew

1 cup burgundy wine
3 cubes beef bouillon
3 pounds cut-up bite-size stir-fry beef
1 can (28 oz.) crushed tomatoes
1/4 cup tapioca -- quick cooking
1 Tbs sugar
2 bay leaves
1 Tbs Jones Crazy salt
1 Tbs Mrs. Dash original
1 pound carrots
2 large potatoes -- cut up
1 package frozen peas
Onions

Put wine, bouillon and cut-up beef in crockpot on High for 1 hour. After 1 hour, add tomatoes, tapioca, sugar, bay leaves, Jones Crazy salt, Mrs. Dash original blend; stir and mix well. Then peel and cut up carrots, potatoes; add peas and onions or use mixed vegetables frozen (1 bag). Cook in crockpot all day on High 6-8 hours and remove bay leaves before serving. Serve above as stew. Can also be served on rice or biscuits. As stew, get a fresh made loaf of Italian bread to eat with it as stew. Serves 4.

Crockpot Vegan Chili

1 can vegetable broth
2 cans kidney beans, drained, rinsed
1 can garbanzo beans, drained
2 cans chopped tomatoes in puree
1 can whole kernel corn, drained
1 onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
2 cloves of garlic, chopped
1 Tbs chili powder
1 Tbs basil
1 Tbs oregano

Combine ingredients in crockpot, simmer for at least 2 hours.

Spicy Crockpot Buffalo Wings

3 or more lb chicken wings or small chicken legs
1 bottle Kraft Spicy BBQ sauce or K.C. Style sauce
1 1/2 tsp red cayenne pepper
1/4 tsp salt
2 tsp black pepper
1/2 tsp garlic flakes; minced
1 tsp onion flakes; minced
3 Tbs Worcestershire sauce
2 Tbs Green Dragon or jalapeno sauce
1 Tbs tabasco sauce
1 Tbs Cajun Spice or Capt. Link's Cajun seasoning

In your crockpot, add chicken, BBQ Sauce, and all spices. Stir and heat on low for 4 hours.

2 to 2 1/2 lbs. boneless steak, cut in small pieces
1 tsp ginger
1 Tbs sugar
2 Tbs oil
1/2 cup soy sauce
1 garlic clove, crushed

Combine all ingredients and pour over steak. Cook on low 4 to 6 hours in crockpot. Serve over rice.

Crockpot Chicken and Sausage Gumbo

You don't have to live in New Orleans to cook up a batch of...

Crockpot Chicken and Sausage Gumbo

1/3 cup all-purpose flour
1/3 cup cooking oil
3 cups water
12 ounces fully cooked smoked sausage links, sliced2
cups chopped cooked chicken
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
4 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
1/4 tsp ground red pepper
Hot cooked rice
2 cups sliced okra or one 10-oz package frozen

For roux, in a heavy 2-quart saucepan stir together flour and oil till smooth. Cook over medium-high heat 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes more or till a dark, reddish brown roux forms. Cool.

In your crockpot place water. Stir in roux. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover and cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours. Skim off fat. Serve over rice. Makes 6 servings.

6 potatoes -- sliced
1 large onion -- sliced
2 carrots -- sliced
1 green pepper -- sliced
1 zucchini -- sliced
1 cup corn -- frozen or fresh
1 cup peas -- frozen or freshAny other favorite veggies

Sauce
2 1/2 cups tomato sauce
1/4 cup Tamari soy sauce -- low-sodium
1 tsp thyme -- ground
1 tsp dry mustard
1 tsp basil
2 tsp chili powder
1/2 tsp cinnamon
1/8 tsp sage
2 Tbs parsley

Layer vegetables in crock pot in order given. Mix together ingredients for sauce and pour over vegetables. Cook six hours on high or 12 hours on low.
