Corned Beef sans Cabbage

2 lb. bag of sauerkraut
1 medium onion
1 small to medium corned beef brisket

Place the sauerkraut in the bottom of the crockpot. Cut the onion in half lengthwise, then slice it crosswise and add pieces to the crockpot. Put the corned beef brisket on top of the sauerkraut and onion and add the seasoning packet that came with the brisket.

If you want to tame the kraut taste a little, add one or two tablespoons of sugar. Turn the crockpot on high cook 5-6 hours, or until done. When done, the meat falls to pieces. Sauerkraut tenderizes tough cuts of meat when you cook them with it.

Malaysian Sweet Potatoes

This recipe has a fruity but nicely Asian sauce that is poured over the potatoes when they get done. Not your everyday stuff.

3 lbs sweet potatoes, peeled and cut into 1 inch cubes
1 1/2 inches fresh ginger, peeled and minced
1 large onion, diced
1 stalk lemongrass, outer leaves removed, and split
lengthwise
1 Tbs sesame oil
1 1/2 tsp tamarind paste
1/4 cup rice wine vinegar
1/4 cup light soy sauce
2 cups orange juice
1 finely grated lemon, zest of
1 pinch ground red pepper (to taste)

Place ingredients into crockpot. Cover and cook on high for 4 1/2-5 hours or until potatoes are nice and tender. Remove lemongrass pieces and discard. Season with salt and pepper, if desired. Remove potatoes and keep warm; pour liquid from crockpot into a saute pan and reduce until it gets thick and syrupy, then pour over potatoes; serve.

Crockpot Macaroni and Cheese

8 ounces elbow macaroni, cooked and drained
1 12-oz can evaporated milk
1 1/2 cups milk
2 eggs
4 cups shredded Cheddar cheese -- divided
1 tsp salt
1/2 tsp black pepper

Place the cooked macaroni in a slow cooker that has been coated with nonstick vegetable spray. Add the remaining ingredients except 1 cup of the cheese; mix well. Sprinkle with remaining 1 cup cheese, then cover and cook on the Low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. Do not remove the cover or stir until the macaroni has finished cooking.

Moroccan Chicken

4 skinless chicken thighs, cut into 1" cubes
2 16-oz cans garbanzo beans, drained
15-oz canned tomatoes, cut into 1" cubes (about 2 cups)
1 large red bell pepper, seeded, cut into 1" squares
1 cup chopped red onion
1/4 cup raisins
2 Tbs tomato paste
2 Tbs water
3 cloves garlic, minced
2 tsp instant chicken bouillon
1 1/2 tsp ground cumin
2 Tbs peanut butter
Hot cooked couscous or brown rice (enough for all)

Place garbanzo beans, tomatoes, bell pepper, onion, raisins, tomato paste, water, garlic, chicken bouillon and cumin in 5-quart slow cooker. Mix until well combined.

Place chicken pieces on top of bean mixture. Cover. Cook on low heat setting 6-7 hours, or until chicken is tender. Stir in peanut butter. Serve over couscous or brown rice. Serves 6.

Crockpot Braised Chicken

3 pounds boneless skinless chicken breast halves
2 tablespoons paprika -- Hungarian
1 1/2 tsp salt
1 tsp pepper
6 large onions -- thinly sliced
1 tsp chicken bouillon powder
12 small red potatoes -- unpeeled and halved
1 10-ounce package frozen green peas
2 Tbs chopped parsley

Rinse the chicken under cold water and pat dry. Season with the paprika, salt and pepper.

Place all vegetables on the bottom of the crockpot, potatoes first, and then put the meat on top. Season with the bouillon powder. Cover and cook until vegetables are tender and the chicken is done. Cook 7 to 10 hours on low or 3 to 4 hours on high.

Spaghetti recipe video

Here's my favorite recipe for spaghetti and meat sauce. And no, no crockpot needed.



Ingredients:

1 pound Italian sausage, hot or mild
1/2 pound ground beef
1/3 cup fresh parsley, minced (or 1/4 tsp dried)
1/3 cup fresh parsley, minced (or 1/4 tsp dried)
6-8 cloves of garlic
1/4 cup minced onion
2 cans Cento tomato sauce
Pasta, cooked al-dente

Crockpot Pork Tenderloin



1 pork tenderloin
1 can of cranberry sauce
1/3 cup French dressing
1/2 cup onion, minced
1/3 cup celery, minced
Salt and pepper to taste
2 cloves garlic, minced
1/2 tsp sweet basil, dried

Put tenderloin in crockpot. Mix remaining ingredients into bowl and stir well. Pour over tenderloin. Cook on high for 4-5 hours or low all day.
