Marmalade-Glazed Carrots

Here's a crockpot recipe for super sweet and soft carrots.

Marmalade-Glazed Carrots

1 package fresh baby carrots - (32 oz)
1/2 cup marmalade
1 Tbs water
2 Tbs brown sugar
1 Tbs butter
1/2 tsp cinnamon
1/4 tsp nutmeg
1 Tbs cornstarch
2 Tbs water
Salt to taste
Freshly ground black pepper to taste

Combine all ingredients in crock pot and cook on LOW for 7 to 9 hours, until carrots are tender.

About 15 minutes before serving, make a paste of the cornstarch and cold water; stir into carrots. Taste and adjust seasonings.

This recipe yields 4 to 6 servings.

Vegetarian Stuffed Peppers

Today's crockpot recipe is for some delicious vegetarian stuffed peppers.

Vegetarian Stuffed Peppers

1 package (10 oz) frozen corn kernels
1 can (15 oz) red kidney beans drained and rinsed
1 can ( 14.5 oz) diced tomatoes
1/4 cup salsa
1/4 cup chopped onions
1 1/2 cups cooked rice
1 tsp Worcestershire sauce
1/4 tsp salt
1/2 tsp pepper
2 cups shredded reduced fat Cheddar cheese, divided
6 green peppers. tops removed & seeded

Combine all ingredients, except 1/4 cup cheese and green peppers. Stuff peppers. Arrange peppers in crockpot. Cover, cook on low 6-8 hours (high 3-4 hours). Sprinkle with 1/4 cup cheese during the last 30 minutes. Makes 6 servings.

Sweet and Sour Red Cabbage

If you like your cabbage sweet and sour, this crockpot recipe is for you.

Sweet and Sour Cabbage

Sweet and Sour Red Cabbage

1/4 cup brown sugar
2 Tbs flour
1 tsp salt
1/8 tsp pepper
1/2 cup water
1/4 cup vinegar
1 medium head red cabbage shredded
1 small onion finely chopped

In your crockpot, combine sugar, flour, salt and pepper. Stir in water and vinegar. Add cabbage and onion and stir to combine. Cover and cook on low 3-4 hours. If you're not a vegetarian, sprinkle 4 diced slices of crispy cooked bacon on top just before serving. Serves 6 to 8.

Crockpot Pepper Steak

I love pepper steak. And here's a good one for an easy crockpot pepper steak recipe.

Crockpot Pepper Steak

1 round steak, floured and cut in strips
1 onion, sliced
1 green pepper, sliced
1 can mushrooms, drained
3 or 4 fresh tomatoes, skinned
1 can of bean sprouts, drained
1 can of green beans, drained
Black pepper or peppercorn medley, to taste
Soy sauce, as much or little as you desire

Layer above ingredients in crockpot in the order given. Cook on low for 8 hours. Do not stir until ready to serve. Serve over chow mein noodles.
