Vegetable Casserole

Today on our menu is the crockpot vegetable casserole.

Crockpot Vegetable Casserole

2 cups carrots, cut in strips
2 cups celery, diced
1 onion, diced
1/4 cup green pepper, diced
1 pint tomato juice
4 cups green beans, drained
1 tsp salt
Dash of pepper
3 tbs tapioca (to thicken)

Mix all ingredients together in crackpot. Dot with 2 tablespoons butter and cook on low for 8-10 hour or on high for 4-5 hours.
