Arizona Beans
You ain't tasted nothing if you ain't never had Arizona beans.
Arizona Beans
1 lb pinto beans (about 2 1/2 cups), rinsed, picked over
2 10 oz cans beef broth
2 1/2 cups water
5 1/2 oz can tomato paste
1 lb lean ground beef, cut into 1-inch cubes
1/4 lb salt pork, diced
1 medium onion, chopped
2 cloves garlic, minced
1 Tbs chili powder
1 tsp cumin seeds
1/2 tsp dried thyme
1/2 tsp red pepper flakes
Salt and pepper
Place all ingredients in slow cooker; cover and cook on low setting 12 hours or until beans are tender. Season to taste with salt and pepper. Makes 8 to 10 servings.
